Baking in my Bolthole :-) Cooking in a Caravan Part 2

This lock down malarkey doesn't half focus the mind.

Here is my Mom's and sisters favourite, Banana Bread recipe.

Yeah yeah, it's Vegan. But it's as tasty as hell and easy peasy!

You've probably got most of the ingredients in your cupboard too :-)





Recipe:

225g Flour

3 heaped tsp Baking powder

3 tsp cinnamon

75g Vegetable oil

3 ripe bananas

100g brown sugar or maple syrup if you prefer.

Anything else you like- I'm putting walnuts in mine. But any dried fruit, cranberries, apricots etc. Nuts or seeds.

Whisk or food processor and baking tin.


Method:


Mash the bananas and the oil together

Put everything else in a mixer

Add the banana mix and whisk all ingredients together.

Once the mixture is a smooth paste, add to your baking tin (lightly coat before with veg oil).

Pop into the over (gas mark 4-6) For between 30-40 minutes or until the knife comes out clean!

Serve with custard, coconut cream, seeds, soya yogurt or fruit. Or all of those!
