Cooking in a Caravan!

Hi All,

We are in total lock down in Spain.

We can only go out for food, medical supplies etc. Only essentials. We can't visit neighbours or family and friends.

The world is a strange place at the moment. But hopefully if everyone adheres to the rules, then we should come out of this a lot better than we went in.

With the spare time lots of folk are exploring their creative side,which is absolutely amazing!

it is often left far behind. But being a creative soul is so uplifting. Whatever it may be.

Doesn't matter if you are a genius or professional at it. As long as it is making you happy. Dance, sing, draw,read, sew, paint, skip or do what I'm doing and cook!


Here is an old favourite of mine. All my friends love it. So I've Vlogged it. After all, Sharing is Caring.


Vegan Spag Bol Recipe.


1 bag of dried soya chunks

Chickpeas (I used dried) About 400g (soak them in cold water for about 12 hours) Rinse and then boil in fresh water for around 45 mins. Use half and either freeze or refrigerate the rest.

1 large jar of tomato sauce

1 diced onion

Diced mushrooms (or whatever else you like, peppers, carrots, sweetcorn etc)

5 minced cloves of garlic (or more)

1 tsp of chilli flakes

1 tbs of olive oil

Mixed herbs, salt and black pepper to taste

Red wine (half a glass) Roble or Rioja. Or whatever you like.


Method

Soak soya chucks for 20 mins in cold water. Rinse and blend into mince.

Heat oil in a large pan, when hot add, onions garlic and chilli flakes

Stir occasionally until they are golden brown

Add mushrooms and when they are cooked add veg (chickpeas or whatever you like)

Stir in for a couple of minutes then add minced soya

Cook, stirring occasionally for about 5-10 mins (I say 20 on the video, but it won't take that long):-)

Add in your tomato sauce and coat all the mixture. Simmer for 5 mins

Add salt, herbs and black pepper to taste. Stir in. Keep tasting until you like it

Add your wine and simmer again for 5-10 mins. Stirring occasionally.


I keep half and freeze half for a rainy day.
